From Wikipedia:

The wedding cake is a tradition that began back in the Roman Empire. At the time, it was a loaf of bread that the groom broke over the bride’s head as a symbol of his dominance in the marriage and over her.  The color of the cake is typically white to symbolize purity. The joint task of the bride and groom cutting the cake is meant to symbolize their first joint task in married life. The gesture of feeding cake to one another is a symbol of the commitment the bride and groom are making.

From Las Vegas Bakeries:

For over 30 years, Freed’s Bakery was THE place to go to in town for any kind of wedding cake or pastry for that matter, but with the growth of the city including the influx of A List Chefs and Restaurants, that has changed.  They still do a whopping business at Freed’s Bakery but they are not the only game in town any more.  Many of the restaurants and hotels have an on-site bakery that can produce a wedding cake as fine if not better than the bakeries who specialize in them.
